Chicken Spin-Gnocchi

Hi all! Spring cleaning has begun and we have been digging through to the very depths of the freezer. Oh my goodness! So many forgotten foods that we have stuck in there for a “later date”. After putting all the frozen fruits aside for our morning smoothies we came across some frozen Gorgonzola Gnocchi that just was calling out to us to make it into something special. Needless to say, we did. With the combination of some chicken, soft swiss cheese and spinach (from our favorite Sunday farmers market) we made quite the hardy meal. All made in one pan!

Spinach

Spinach is becoming one of our favorite ingredients to use in the kitchen! Put it in a smoothie or use it as a salad. It’s one of those rare dark leafy greens that can be eaten in so many different ways making it a delicious way to add more nutrients to your meal. What nutrients? Spinach has potassium, Iron, Calcium and Magnesium. Also, it contains an antioxidant known as alpha-lipoic acid and as a result, eating it can help people with diabetes keep it under control. Our ingredients list on here states 2 cups of spinach, but it cooks down so much that you can always add as much as you want to the pan.

Finally, please remember:

-Always clean your work station when dealing with raw poultry-

-Chicken needs to be cooked all the way through.-

Ingredients

1 cup of milk (we use 2%)

2 TBS of unsalted butter

Press 2 cloves garlic

2 cups of loosely packed spinach

1 package of Gorgonzola Gnocchi

2 triangles of soft swiss cheese

1 chicken breast (cut up into cubes)

Directions

  1. Once you have cut up the chicken breast into small cubes add some salt, pepper and olive oil on the chicken for flavor. Always desensitize your work area if you are dealing with raw chicken!
  2. Take a frying pan, lightly cover the surface with olive oil and place it on the burner on medium high heat.
  3. When the pan is hot add the chicken. You should hear the chicken sizzle on the pan.
  4. Once the chicken is cooked through, add the pressed garlic. let it cook, but don’t brown it.
  5. Place the he spinach on the pan and let it cook down.
  6. Add the soft swiss cheese and then pour in the milk and butter. Let it all melt.
  7. Top it with the Gorgonzola Gnocchi. If you don’t want the extra cheese you can put just Gnocchi in the dish.
  8. Place the lid on top and let it cook for 7 minuets or till all ingredients are melted together. Stir occasionally.
  9. Plate and enjoy!

We were able to stretch this meal into 4 meals with some sides, because we split it up before plating. But we could have easily have eaten the whole thing in one sitting!
