What to eat in summer?

It’s summer! And that means you need a salad that has the fresh, light and colorful produce that this season has to offer. In addition to being delicious; this salad is also healthy. Double thumbs up!

Butter Lettuce

Butter lettuce is one of the leafy greens that you can buy as “living lettuce”. It doesn’t come any fresher unless you grew it yourself. If you have the chance to buy it this way, go for it. We wait all year for butter lettuce to be sold at the farmers market. in fact, The lettuce that we show here is called hydroponic lettuce because it was grown in a nutrient rich liquid, not in soil. Butter lettuce is full of vitamin A and therefore can have antioxidant potential, boost your immune system and help some of your organs work properly (such as the heart, lungs and kidneys.).

Blueberries

Speaking of antioxidants- this salad has blueberries! They have a very high amount of phenols which help slow down the deterioration of motor function and memory loss. In other words, they help your body and brain function better. Also, if you are planning on having fun in the sun; these power fruits can help reduce the damage your skin might get from sitting out to long.

Grapefruit

People seem to have mixed feeling about grapefruit. In the 80s there was a huge craze of eating just grapefruit for breakfast. I tried it many times and as a result, all I can say was that it made my mood more sour than the fruit I was trying to eat. And it has so many health benefits. It has potassium and Vitamin C which helps repair body tissue. Due to grapefruits acidic nature it needs some backup to bring out its flavor. Mix it an a salad with a hint of honey mustard and sweet blueberries, then it is the perfect complement.

Ingredients

1 Head of butter lettuce

Cut up 1 Grapefruit

1 Cup Blueberries

1/2 Cup Goat Cheese

1/4 Cup Slivered Almonds (optional)

Honey Mustard Dressing (Probably will only need half of what the the recipe makes below)

Directions

  1. Cut up the head of butter lettuce (We like to cut it up small, but some people like to leave it with whole leaves)
  2. Wash, dry and put in a big mixing bowl.
  3. Cut up the grapefruit into bite size pieces.
  4. Add the Honey Mustard Dressing putting in just enough to cover the leaves. Mix together.
  5. Add to the salad: Grapefruit, Blueberries, Goat Cheese and Almonds.
  6. Plate and enjoy!

Grapefruit Butter lettuce blueberries

Honey Mustard Dressing

2 TBS Mustard

4 TBS Honey

2 TBS Olive oil

Juice From Half a Lemon

Salt and Pepper

Whisk together ingredients in a mixing bowl, pour on salad and save any you have left in the refrigerator.
