So lets talk about Lobster!

Eating lobster was a sign of poverty prior to the mid-century. People were embarrassed to eat it and they would bury the shells in the ground instead of throwing them in the trash. Servants even had clauses in their contracts that they would not be forced to eat Lobster more then twice a week!

Now, of course, you can order it at high end restaurants, and impress your friends when you serve it on your personal dinner table.

Why is it red after cooking?

Astaxanthin is a protein that gives the shell its red color. This red pigment is hidden under a blue colored protein that breaks down at high temperatures. Hence, when the shell is cooked the blue protein breaks down and the red remains.
